Beef & Okra with Orzo Pasta
This comforting recipe is a delicious blend of textures and savory goodness that everyone will love.
- 1lb stew meat
- 15 oz frozen cut okra
- 16 oz can tomato paste
- 28 oz can of crushed tomatoes
- 1 large onion chopped
- 4 cloves garlic – minced
- 7 tblsp olive oil
- 2 tblsp chopped parsley
- 1 tblsp dried oregano
- 28 oz water
- 1/1/2 cup of toasted orzo
Directions:
Preheat oven – 350 degrees
In large saucepan sauté onion, garlic in 4 tbsp. olive oil. Cook until soft. Add crushed tomatoes and tomato paste stir until thoroughly mixed with onion and garlic then add basil and oregano, Stir. Add water. Stir and add salt and pepper to taste. Cover and let cook over low-medium heat. Stir occasionally.
In large skillet- add olive oil heat then add meat, cook over medium heat until browned add okra and cook for 15-20 minutes.
In a 9x12 baking dish pour 1 1/2 cups orzo pasta. Place dish in oven for about 8-10 minutes until orzo is golden brown. Remove from oven. Put meat& okra in with orzo then pour sauce over all and stir in baking dish. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
