Birria Tacos

Ingredients:

  • 2 lbs beef chuck roast (or short ribs)
  • 2 cups beef broth
  • 1 can (7oz) chipotle peppers in adobe (or 2 Tbsp chili powder for less spice)
  • 1 packet taco seasoning
  • 1 Tbsp apple cider vinegar
  • 1 small red onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 pack corn tortillas
  • 1 cup shredded cheese (optional)
  • ¼ cup chopped cilantro and onion (for topping)

 

Directions:

Add ingredients from beef to ground pepper into a crock pot.

Cook low for 6-8 hours (or high for 4 hours).

Once done, shred beef with forks and mix back into juices.

Heat pan over medium heat.

Dip tortilla in crock pot of broth.

Place on pan.

Add shredded beef and cheese (if using).

Fold tortilla and cook until crispy turning on both sides.

Garnish with cilantro and onions and side of broth.

*Serve with our Crockpot Refried Beans for a complete Latin dish.
