Chickpea Salad

Looking for a quick and healthy new summer favorite? This recipe will hit the spot.

Ingredients:

  • 5 cups diced cucumbers
  • 2 cups chopped tomatoes
  • Two 15-ounce cans of chickpeas, drained and rinsed
  • .25 cup lemon juice
  • .25 cup olive oil
  • .5 TSP honey
  • 1 TSP Dijon mustard
  • 3 TBSP fresh dill
  • .33 cup feta cheese
  • salt and pepper to taste

Directions:

Combine cucumber, tomatoes, and chickpeas in a large bowl.
In a small bowl, whisk the remaining ingredients.
Combine it all together.
Enjoy!

PS – For some extra protein and fiber, add a half cup of cooked black quinoa.
