Dirty Rice
This healthy recipe comes from the kitchen of our Chief Admin Officer Mary Coe. Her daughter, a notoriously picky eater, digs right in.
- 1 TBSP olive oil
- 3 garlic cloves, minced
- 1 yellow onion, chopped
- 1lb ground beef
- 1 cup rice
- 1 3/4 beef broth
- 2 TBSP Worcestershire sauce
- 8 oz mushrooms, sliced
- 1/2 cup Spanish olives, sliced
- Cajun seasoning (to taste)
- Salt (to taste)
- Pepper (to taste)
Add olive oil, garlic, and onion into a large saucepan. Sautéed for 2-3 minutes.
Add beef, and season with salt and pepper.
Once the beef is thoroughly cooked, add rice.
Cook for 1 minute.
Add beef broth and Worcestershire sauce.
Add mushrooms.
Bring it to boil.
Lower heat and cook until all liquid is gone, about 15-20 mins.
Add olives and Cajun seasoning.
