Heart Tofu & Bean Soup
A nourishing blend of tender tofu and hearty beans, perfect for a wholesome meal.
Ingredients:
- 1 clove of garlic
- ¼ tsp of crushed red pepper flakes
- ½ cup of frozen lima beans
- ¾ cup of vegetable broth
- ¼ tsp of thyme
- ¼ cup of lowfat or nonfat milk
- 2 ounces of firm tofu
- ½ tsp of olive oil ¼ tsp of paprika
- ½ tbsp of fresh parsley
- ¼ onion, small
Directions:
Chop onion and mince garlic. Drain and dice tofu into small pieces. Heat oil in a medium nonstick saucepan over medium heat and cook onion and garlic with crushed red pepper, covered, until onions are tender, about 5 minutes, stirring occasionally. Add frozen beans and broth, bring to a boil, reduce heat to low, add thyme and simmer, covered for 5-6 minutes, until beans are tender. Cool slightly and process soup in a blender or food processor or with an immersion blender until smooth. Return to the saucepan, stir in tofu and milk and heat through over low heat for 5-6 minutes, stirring occasionally. Serve sprinkled lightly with paprika and fresh parsley.
