Lamb Chops w/ Roasted Potatoes

Ingredients:

  • 2 pounds lambs, bone in
  • 6 potatoes , cut into 1/4s
  • 1 beefsteak tomato, minced
  • 5 garlic cloves, minced
  • 1 Tbsp fresh oregano, chopped
  • ¾ cup olive oil
  • Salt and pepper to taste
  • Feta to garnish

 

Directions:

Preheat oven to 400 degrees.

Cut lamb into 4 equal pieces.

Add all ingredients from potatoes to pepper and mix well (this works best if you use your hands).

Arrange lamb on top, cover loosely with foil.

Bake for 45 mins, then flip lamp and turn potatoes.

Bake another 45 minutes.

Lamb should be pulling away from the bone when it is done.

 

Top with feta and enjoy with salad or your favorite side dish.
