Pomegranate Chocolate Delights

Ingredients:

  • 1 ¼ cup pomegranate seeds
  • 1 cup bittersweet chocolate chips (Ghirardelli 60% cacao is great)
  • ¼ cup coconut milk, room temperature
  • Muffin molds or paper muffin cups

 

Directions:

Melt chocolate chips in a double boiler.

Remove from heat.

Add coconut milk, 1 tablespoon at a time stirring constantly. You want the chocolate to turn smooth and thick.

Add pomegranate seeds to mold/muffin cup.

Top with ½ tablespoon of chocolate sauce.

Refrigerate overnight.
