Roasted Barramundi with a Homemade Mediterranean Relish
This dish is a delightful blend of rich, savory fish and vibrant, tangy vegetables.
Ingredients:
- 2 fillets Barramundi, about 5-6 oz (about 177.44 ml). each
- 1 tbsp + 2 tsp olive oil
- 1/4 cup cherry tomatoes, finely chopped
- 1/4 cup kalamata olives, finely chopped
- 1/4 cup Spanish olives, finely chopped
- 1 tbsp lemon zest
- 2 tbsp fresh-squeezed lemon juice
- 2 tbsp fresh parsley, finely chopped
- salt and pepper to taste
Directions:
Preheat oven to 400 degrees.
Rub both sides of fish with 2 tsp of olive oil, salt, and pepper (to taste)
While fish is cooking in oven for 10-12 mins, make the relish.
Combine tomatoes and both types of olives, the lemon zest and juice ,1 tbsp olive oil and parsley
Salt and pepper to taste.
Once fish is cooked (should be firm to touch), plate and top with relish and sprinkle with parsley.
