Shakshuka
Shakshuka is a traditional North African and Middle Eastern dish that is usually eaten for breakfast but can be enjoy at any part of the day!
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 red bell pepper, seeded, and diced
- 4 garlic cloves, finely chopped
- 2 teaspoons paprika
- 1 teaspoon cumin
- ¼ teaspoon chili powder
- 1 28-ounce can whole peeled tomatoes
- 6 large eggs
- salt and pepper, to taste
Directions:
Heat olive oil over medium heat and add the bell pepper and onion. Cook for 5 mins or until the onion becomes translucent. Add garlic and spices and cook an additional minute.
Next, add the tomatoes and juices, using a spoon/spatula to break the tomatoes down and season with salt and pepper.
Reduce heat and simmer for about 10 minutes.
Crack the eggs into the pan, making sure there is space between them. Cover and cook for about 5-7 minutes (or until the eggs are cooked to your preference).
Most of the time, this is served with Naan or pita, and can be garnished with cilantro, parsley, goat cheese or feta.
