Turkey Stew
A comforting blend of tender turkey and savory vegetables simmered to perfection. It's a delicious way to enjoy a wholesome meal!
Ingredients:
- 2 ½ ounces of boneless & skinless turkey breast
- ½ clove of garlic
- 1 carrot
- ½ onion, small
- 1 small potato (3 oz)
- 2 tsp of olive oil
- ¼ tsp. of Italian seasoning
- ¼ tsp. of black pepper
- 1 tbsp of fresh cilantro
- 1 cup of vegetable broth
Directions:
Rinse and pat dry turkey breast. On a separate cutting board, cut turkey into bite sized cubes, set aside. Scrub potato and carrot (s); rinse all other vegetables and cilantro. Cut vegetables into bite sized pieces; chop cilantro and mince garlic, set aside. In a medium nonstick saucepan heat oil over medium heat; sauté garlic for 1-2 minutes, add turkey and lightly brown, about 3-5 minutes more. Add the chopped vegetables, broth, and enough water to just cover; bring to a boil. Add spices and cilantro; cover, reduce heat and simmer for about 15 minutes, or until potatoes are tender. Serve.
