Vegetarian Meatloaf
A hearty, satisfying dish packed with flavor and made with wholesome plant-based ingredients. Perfect for a comforting meal any day of the week!
Ingredients:
- ½ cup of canned soybeans, rinsed and drained
- ¼ onion, small
- ¼ large celery stalk
- ¼ bell pepper
- 1 ½ tbsps. of breadcrumbs, low sodium
- ½ clove of garlic
- ½ tsp. of honey
- ½ tsp. of cayenne pepper
- ½ tsp. of dried sage
- 1 oz of tomato sauce, low sodium
- ½ tsp of olive oil
Directions:
Rinse and drain beans, then coarsely chop in a processor or blender. Heat oil in a nonstick skillet over medium heat and sauté beans for 4-5 minutes, until lightly browned. Stir in the remaining ingredients and cook for 3-4 minutes. Remove from heat, let cool and shape into a loaf. Turn into a nonstick loaf pan lightly sprayed with cooking spray and bake in a 350-degree F oven for 1 hour.
Serve with salad.
