Vegetarian Meatloaf

A hearty, satisfying dish packed with flavor and made with wholesome plant-based ingredients. Perfect for a comforting meal any day of the week!

Ingredients:

  • ½ cup of canned soybeans, rinsed and drained
  • ¼ onion, small 
  • ¼ large celery stalk 
  • ¼ bell pepper 
  • 1 ½ tbsps. of breadcrumbs, low sodium
  • ½ clove of garlic 
  • ½ tsp. of honey 
  • ½ tsp. of cayenne pepper 
  • ½ tsp. of dried sage 
  • 1 oz of tomato sauce, low sodium
  • ½ tsp of olive oil 

Directions:

Rinse and drain beans, then coarsely chop inprocessor or blender. Heat oil in a nonstick skillet over medium heat and sauté beans for 4-5 minutes, until lightly browned. Stir in the remaining ingredients and cook for 3-4 minutes. Remove from heat, let cool and shape into a loaf. Turn into a nonstick loaf pan lightly sprayed with cooking spray and bake in a 350-degree F oven for 1 hour.

Serve with salad.
